Traditional Greek Salad
7 oz greek feta cheese
half head of iceberg lettuce or shredded romaine
12 greek black olives – pitted
2 tbsp fresh herbs such as oregano, parsley (flat leaf) mint or basil
6 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
1 garlic clove
pinch of sugar
salt and pepper
Make the dressing by whisking together the oil, lemon garlic, sugar, salt and pepper ina small bowl. Set aside.
Cut the feta cheese into cubes about i inch squares. Put the lettuce, tomatoes, cucmber in a salad bowl. Scatter over he cheese and toss together.
Just before serving, whisk the dressing and pour over the salad greens and toss together. Scatter over the olives and chopped herbs and serve!
This one is simple and delicous!
