2 lb tomatoes, thinly sliced
1 tbsp sugar
salt and pepper
1 red onion, thinly sliced
large handful coarsely chopped fresh herbs
2-4 tbsp extra virgin olive oil
2 tbsp red wine vinegar or fruit vinegar
Arrange the tomato slices in a shallow bowl or serving plate. Sprinkle with sugar (if using) salt and pepper.
Seperate the onion slices into rings and sprinkle them over the tomatoes. Sprinkle the herbs over the top. Any fresh herbs that are in season can be used. Tarragon, cilantro, sorrel or basil are great examples.
Place the dressing ingredients in a jar with a screw top lid. Shake well. Pour the dressing over the salad and mix gently. Cover with plastic wrap and chill for 20 mins.
Remove 5 mins in advance and enjoy!
