3 oz cucumbers, cut into batons
6 scallions, halved
2 tommatoes, seeded and cut into 8 wedges
1 yellow peopper, seeded and cut into strips
2 celery stalks, cut into strips
4 radishes, quartered
3 oz arugula
1 tbsp chopped fresh mint, to garnish (optional)
2 tbsp lemon juice
1 garlic clove, crushed
2/3 cup plain yogurt
2 tbsp olive oil
salt and pepper
To make the salad, gently mix the cucumber batons, scallions, tomato wedges, yellow bell peppers strip, celery strips, radishes, and arugula in a large serving bowl.
To make dressing, stir the lemon juice, garlic, plain yogurt, and olive oil together in a small bowl until thoroughly combined. Season with salt and pepper to taste.
Spoon the dressing over the salad adn toss to mix! Sprinkle the salad with chopped mint (if using) and serve.
