1 lb 2 oz red dessert apples, sliced
3 tbsp. fresh lemon juice
2/3 cup light mayonnaise
1 head celery
4 shallots, sliced
1 garlic clove, finely chopped
3/4 cup walnuts, chopped
1 lb 2 oz cooked chicken, cubed
1 cos lettuce
chopped walnuts, to garnish
Place the apples in a bowl with the lemon juice and 1 tablespoon of mayonnaise. Leave for 40 minutes.
Using a sharp knife, slice the celery very thinly. Add the celery, shallots, garlic, and walnuts to the apple and mix together. Stir in the mayonnaise and blend thoroughly.
Add the cooked chicken to the bowl and mix well.
Line the serving dishes with the lettuce. Pile the chicken salad into the serving bowls, sprinkle with pepper and garnish with chopped walnuts.
